Caviar selection

Our caviar varieties Royal Black Caviar, Imperial Caviar and Imperial Selection Caviar are selected by us from the caviar range listed below and are always of the highest quality.

Acipenser baerii caviar (Siberian sturgeon)
The color of Siberian sturgeon eggs ranges from dark brown to black, with small, firm grains. The caviar is very aromatic and has a hazelnut flavor. The caviar is salted using a gentle process (malossol). The Russian word "malossol" means "mildly salted." This light salting refines the caviar and makes it more durable. In terms of taste and appearance, Baeri caviar is similar to Sevruga caviar, yet it is less expensive and a delight for the eye and palate.

Acipenser gueldenstaedtii Caviar (Waxdick)
The Russian sturgeon, or waxdick, is found in the Caspian, Black, and Azov Seas and their tributaries. This caviar is medium to brownish-gray in color. With its small grains, it has a delicate, slightly nutty flavor. It is the second most expensive caviar after the beluga.

Acipenser naccarii caviar (Adriatic sturgeon)
This caviar comes from the Adriatic or Italian sturgeon (Acipenser naccarii) and is slowly being introduced to the market. Historically, this sturgeon was native to Mediterranean Europe and is farmed in both Spain and Italy.
The naccarii caviar is shiny black, mild and creamy in taste.

Acipenser schrenki caviar (Amur sturgeon)
This caviar is obtained from the Schrencki sturgeon (Acipenser schrencki), which originates from the Amur River and is farmed in China. It produces exceptional caviar with medium-sized, firm, and clear grains and a golden-light brown color. Its flavor is slightly nutty.

Kaluga- Huso dauricus caviar (Siberian beluga)
The Kaluga sturgeon (Huso daricus) originates from the Amur River Basin in China. Kaluga is a farmed caviar of very high quality with large, light brown eggs.

Beluga Huso huso caviar (European beluga)
The beluga sturgeon (Huso huso) originates from the Caspian, Black, and Azov Seas, as well as the Adriatic Sea basins. The beluga is the largest sturgeon and produces the largest and softest roe. Beluga is the world's most expensive caviar. Beluga caviar ranges in appearance from steel gray to anthracite black. Its flavor is very delicate and creamy.

Sevruga- Acipenser stellatus caviar
The caviar is obtained from the eggs of the starfish (Acipenser stellatus), which also originally lived in the Caspian Sea. The caviar has a delicate, firm-grained marine flavor and an intense nutty aroma. It shimmers in all shades of gray.
