What are truffles?
A variety of tuberous, mostly underground mushrooms are colloquially referred to as truffles, with a distinction being made between true and false truffles. The genus Tuber, to which truffles belong in the narrower sense, includes some of the most expensive and culinary-value mushrooms.
The word "truffle" originates from the French word "truffle," which in turn derives from the Latin word "tuber," meaning "bump" or "swelling." From German, the word spread into Danish ("trøffel") and Swedish ("tryffel"). The grammatical gender of the word varies between masculine and feminine, and thus also its plural form (if masculine, "Trüffel" as in the singular; if feminine, "Trüffeln").
The first references to truffles date back to 3000 BC, originating in Mesopotamia. Since then, the delicacy has become so popular among gourmets that the most adventurous speculations have been made about the origin and life of the precious tuber.
An older name for truffles is "nut mushroom." Other old names include earth mushrooms, earth sponges, greaves, and peanuts.
Truffles are used more as a spice, rarely in large quantities.
Proper storage of truffles
If you want to store your truffles for a short time, please note the following:
Black truffles You should clean them thoroughly with a brush. You can then store them in a closed terracotta container for up to 10 days.
White truffles can only be stored for two to seven days. Wrap the truffles in breathable paper and place them in a glass jar, then in the vegetable drawer of the refrigerator. Change the paper once or twice a day. If you prefer a different method, wrap the truffles in paper and store them in rice. This will allow the truffles to impart their flavor to the rice. This way, they can be stored for one to two days.
If you want to store your truffles for a long time, we recommend the following method:
Black truffles Soak the truffles in lukewarm water for a quarter of an hour and then brush them thoroughly. Place the truffles in a glass container, seal it, and sterilize it in a water bath for three hours.
