The Tuber Uncinatum, better known as the autumn or Burgundy truffle, is considered the more aromatic sister of the summer truffle. With a fruiting body measuring 2 to 8 cm in diameter, it is round to irregularly shaped, sometimes with characteristic grooves. The black outer skin is covered with wart-like bumps—a typical identifying feature. When ripe, the interior reveals a chocolate brown color with densely branched, white veins.
Compared to the summer truffle, the Burgundy truffle has a more intense, woody aroma and unfolds a pleasantly nutty flavor with a subtle hazelnut note on the palate. The harvest season extends from October to January, particularly in the truffle regions of Burgundy and Champagne. A culinary treasure for gourmets, it brings depth and elegance to any dish.
Our recommendation: To further intensify the flavor of fresh truffles, we recommend adding some shaved truffles to the sauce. This will allow the truffle to infuse slightly into the fat and release its aroma. However, only cook over low to medium heat. The sauce should not sizzle or simmer too vigorously.
When compiling the sizes of the shipping units, as many 15g+ truffles as possible are used.
Storage & Shelf Life:
Remove the truffles from the vacuum upon receipt. Store in a refrigerator at +3°C, wrapped in absorbent paper (change daily) or in a sealed glass container. These premium products are best consumed within 7 days. because the truffle loses its aroma every day.
